Chocolate Chip Zucchini Cake

Delicious Summer time cake, your family won't even know there's zucchini in it unless you tell them.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup oil
  • 1 3/4 cups sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 4 Tbsp cocoa
  • 2 Tbsp ground flax seed (optional)
  • 2 cups grated zucchini
  • 1 cup chocolate chips

Instructions

  • Cream together butter, oil, sugar and brown sugar.
  • Add eggs, vanilla, and buttermilk.
  • In a separate bowl, mix dry ingredients. Then add to creamed mixture.
  • Add grated zucchini and chocolate chips, stir well.
  • Pour into a greased pan. (Bundt pan, 9x13 inch baking pan, 2 loaf pans...)
  • (Option 2: save brown sugar and chocolate chips until the end. Mix together and sprinkle over cake batter.)
  • Bake at 350 degrees for 45-50 minutes.
